The Mark Twain Menu

Two great posts about Mark Twain’s favorite foods, some that still exist and some that have disappeared.  In the latter case, the short captions give a brief history of environmental arrogance and the stark consequences of our actions – a romantic sense of loss through culinary icons.  Even though most of these delicacies are meat, it’s still OK to mourn the loss of whole species to nitrogen and phosphorous waste from farming, poor waste management and human encroachment.
